docs: Update README for InfraHub migration

- Replace NetBox with InfraHub as Source of Truth
- Update architecture diagram
- Explain InfraHub benefits (Git-native, custom schema)
- Update project structure (remove netbox references)
- Update technology stack
- Revise project phases for new approach
